Ingredients
- Chicken Breast: 2 boneless, skinless chicken breasts
- Salt and Pepper: To taste
- Italian Seasoning: 1 teaspoon
- Olive Oil: 2 tablespoons
- Butter: 4 tablespoons, divided
- Fettuccine Pasta: 12 ounces
- Garlic: 3 cloves, minced
- Heavy Cream: 1 1/2 cups
- Parmesan Cheese: 1 cup, freshly grated
- Parsley: Freshly chopped, for garnish
Instructions
- Cook the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken and cook for about 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and let rest for 5 minutes before slicing.
- Cook the Pasta: While the chicken is cooking, bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta.
- Make the Alfredo Sauce: In the same skillet used for the chicken, add 2 tablespoons of butter and melt over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Pour in the heavy cream and bring to a gentle simmer. Let it cook for 3-4 minutes, stirring occasionally.
- Add Parmesan and Pasta: Reduce the heat to low and gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.
- Combine: Add the cooked pasta to the sauce and toss to coat. Add the sliced chicken on top and garnish with freshly chopped parsley.
- Serve: Serve immediately, topped with extra Parmesan cheese if desired.

- To make the Alfredo sauce thicker, simmer it longer or add more Parmesan cheese.
